Remove and mix with a electric beater until mix resembles soft serve. Place in container and freeze again for 2-3 hours and serve! Trying out new ice cream recipes for our ice cream maker that has sat in the cupboard for several years! 4 egg yolks 3/4 cup powdered sugar 2 tsp real vanilla extract 1 cup heavy whipping cream 1 cup milk Blend eggs, sugar and vanilla until smooth and add in cream and blend until smooth Heat milk in a saucepan over medium low heat until it almost begins to boil (scald) Remove from heat and pour a bit of the hot milk into the egg mixture and stirring egg mixture continuously. Continue to add hot milk a little at a time until blended. Pour mixture back into pot and heat over medium low heat stirring continuously until mixture thickens enough to cover the back of a spoon. Heat until it almost begins boiling. Remove from heat and refrigerate until cool. Follow manufacturer’s directions to use the ice cream maker. Muffins: 2 cups shredded carrots 3 eggs 1/2 cup applesauce, unsweetened 2 tsp. cinnamon 1/2 cup rolled oats 3 cups whole wheat flour Frosting: 8 oz. low fat cream cheese, softened 1/4 cup applesauce, unsweetened Instructions: Muffins: Preheat oven to 350° F Lightly spray cups of muffin tin. In a large bowl stir together the carrots, eggs and applesauce. Set aside. In another medium bowl whisk together the cinnamon, oats and flour. Slowly mix in the dry ingredients. Stir until well blended. Spoon mixture into muffin tin. The dough will be thick, so you may wet your fingers to press the dough into place. The dog cupcake will not rise very much, so do not worry about over filling the muffin tin. Bake for 25 minutes. Cool completely on a wire rack before frosting or serving. Frosting: Blend both ingredients with a hand mixer until well blended. Spoon into a pastry bag for easy decorating. Carob Chip Ice Cream Ingredients: 2 6oz containers of plain yogurt (low or non fat) 1 Tbsp. Honey 1/3 cup of carob chips Instructions: Mix all ingredients in a medium bowl until well combined. Spoon into an ice cube tray or cupcake liners.
