Then come join me and I’ll show you how to prepare a yummy, healthy, “raw food” version of coconut ice cream! TOOLS: – Food Processor (can substitute with a blender capable of grinding nuts OR coffee grinder) – Freezer (or ice cream maker if you have one) AJA’S COCONUT ICE CREAM RECIPE: (yields 2 servings, approx. 400 calories/serving) * Most of the following ingredients can be purchased at your local health food store :-) – 1/2 Cup Water (filtered if possible) – 1/4 Cup Raw Cashews + 1/4 Cup Raw Macadamia Nuts OR 1/2 Cup Raw Cashews – 1/8 Cup Raw, Flaked Coconut – 1/8 – 1/4 Cup Coconut Oil OR 1.5 Tbs Coconut Butter – 3 Tbs. Coconut Sugar + Agave Nectar to taste (OR any sweetener of your choice to taste) – Pinch of Sea Salt – Dash of Lime Juice – 1 Tsp. Raw Chocolate/Cacao Nibs DIRECTIONS: Process/blend all ingredients in food processor/blender till smooth. Pour mixture into bowl and chill in the freezer from 3-5 hrs. (depending on freezer settings). IMPORTANT: Churn/stir the ice cream ever hour until completely frozen to break up the frozen layer that will form on the surface and ensure a homogeneous consistency. A great recipe I found on the blog, “Making Love In The Kitchen”, by holistic nutritionist Meghan Telpner. Super simple, and dairy-free. I made a double recipe in the video, and also forgot to add the vodka – so this batch froze pretty solid. If you find you ice cream is too hard to eat, just let it sit in a sink filled with hot water and it will thaw pretty quickly. I used plastic tupperware for storage here, but always use glass for food products if you can. COCONUT BANANA ICE CREAM 1 can full fat organic coconut milk 1/4 cup honey 1 large banana 2 tsp lemon juice 3 Tbs dried coconut 2 Tbs Vodka (Optional: Lowers freezing point, makes ice cream smoother) Plus any fruit of choice – berries, mango, pineapple etc. • Place banana, lemon juice and honey in a blender and process until well mashed. • Add coconut milk, dried coconut and optional vodka and blend again. Meghan Recommends: • Freeze in ice cube trays for 3 or more hours, reserving about a 1/2 cup in the fridge. • Place about 3 cubes per person into the food processor, add some of the non-frozen mix and process until smooth. I prefer to freeze it all, I find any left in the fridge spoils too quickly to be used. Recipe found here: meghantelpnerblog.com Song is: Magdalena by A Perfect Circle

Only 5 ingredients stand between you and some delicious creamy (almost raw) vegan ice cream: Cashew nuts, cacao powder, vanilla extract and maple and agave syrups (vegan chocolate chips optional.) Even a picky 7-year old will love it. Enjoy! ps The ice cream is 90% raw because maple syrup is typically processed with heat above 115F degrees. pss Oops! Made a mistake when I answered a posted question below – must have been zoning out! I’m using the Blendtec blender. Although Vitamixs are great too! I wrote a review comparing the two on my blog here: thelabrawtory.com The ice cream maker has been discontinued. :( Courtesy of Kali Lilla www.KaliLilla.com Music Credit Evenflow by Pearl Jam
